    <title>mold funghi: toxic or beneficial?</title>

    <summary type="html">&lt;div&gt;Sometimes you see a sort of blue-grey furry little colony of what they call "mold" growing on foods. In the lore of mother's kitchen, these are to be thrown out... they've "gone bad". But now I wonder.
&lt;br/&gt;Some  specialty cheeses, like gorgonzola, seem to be prized Because of the mold, not in spite of it. 
&lt;br/&gt;There seem to be other foods as well that require mold, or at least yeast, to develop full flavor: 
&lt;br/&gt;
&lt;br/&gt;The other day some berries went a bit moldy, with a kind of white furry growth. I took the easy way and dumped them...but I wonder!
&lt;br/&gt;
&lt;br/&gt;Question is: what food molds are toxic and bad and sickening... and then what molds are good for you... either as food value , or medicine.... and then how can one identify the difference between nutritious or else inedible molds?

    <title>Yipee! Morels are flushing in my back yard!!!</title>

&lt;br/&gt;
&lt;br/&gt;I'm so excited. I just gotta gloat for a second.  The first time I was introduced to morels was in college fifteen years ago.  My best buddy was a grad student in mycology and we'd go out collecting various mushrooms for his research as well as for eating.  One year, the grounds keepers laid woodchips on all the landscape beds across campus...and lo and behold, morels popped up everywhere!  No students except the itty bitty mycology dept. realized that the mushroom fairies blessed us that spring.  We literally filled at least ten paper grocery bags with the blissful morel mushroom.  I have collected morels in the wild, but never in such quantity as that time on campus.
&lt;br/&gt;
&lt;br/&gt;Last week, the mushroom fairies have visited me again.  Morels are popping up all over my back yard!  This past fall and winter I re-landscaped my yard, and brought in redwood mulch.  I'm convinced that they didn't hitch a ride on the mulch this time, but were latent in the soil.  I've read that this variety of morel is called "landscape morel," and that they typically flush the first year that the soil is disturbed, and don't fruit thereafter.  The only drawback to my morel discovery, is that they aren't fruiting all at once, so I'm trying to collect them as they mature and saving them so that I have enough to make at least one meal.  I just can't bring myself to cook up two mushrooms, ya know?    I've posted two pictures of one specimen, and will post more soon.

    <summary type="html">&lt;div&gt;Hi there...just now re-joining this tribe after many months away.  Has anyone else noticed that our fearless leader hasn't posted anything in well over two years?  Jason, are you still out there?  It would be so nice to have a tribe photo that isn't a question mark!  I'd love to see this tribe infused with some new vitality.  I'd be happy to carry that torch, unless someone else here is also eager.  I think all we'd have to do is notify Tribe.net, then have a little democratic action.  I'm gearing up for a new season of mushroom photography here in New Hampshire, and would love to upload some photos here, get some thoughts on identification, and share my two cents on your photos and forays as well! &lt;br/&gt;Is there a particular place such people tend to hang out? 
&lt;br/&gt;
&lt;br/&gt;Someplace lacking crack heads and tweakers and other types I personally prefer to avoid.

&lt;br/&gt;I know stupid idea to post publically, but after looking around tribe.net for a week or two it seems reasonably safe to take a few small risks??&lt;/div&gt;

&lt;br/&gt;
&lt;br/&gt;The other day I came across some Chicken Fat Sulius mushrooms while out riding. I gathered some and brought them home to identify. I did a spore print overnight and then I was busy the next. So I picked the mushrooms on Sunday, and on Tuesday I had the time to prepare them. I had stored them in the Fridge in a paper bag and, following what I had read, attempted to remove the upper slimy cuticle layer and the tubes (both reported to cause mild intestinal upset in some people). What a complete nightmare! It took me about 15 minutes just to do one and by that time, what was left was small and quite bruised. 
&lt;br/&gt;
&lt;br/&gt;So, what I want to know is, does anyone know of an easier way to clean them? Should I have done it right after picking? Is there some process that simplifies it? Or is it just a complete P in the A and I should plan enough time for the preparation? In this instance, I said screw it and decided to string them up to dry since then I wouldn't have to scrape off the top and tubes.

&lt;br/&gt;I've been picking and eating wild mushrooms for many years but somehow this is the first time I've picked a Slippery Jack ally. Any help or suggestions would be much appreciated. &lt;/div&gt;

    <summary type="html">&lt;div&gt;It just poured cats n dogs this morning! The children of the rain are waking up and I'm so very excited!!!! Chicken of the Woods will be poppin up in the next couple of weeks, those are great and quite plentiful here in the East Bay, I usually find about 20 lbs of them in one afternoon. Also known as Sulfur shelf because of its bright sulfur yellow pores, the top being a bright orange, hard to miss in the woods! There are about 4 different varieties of this mushroom. Most are edible and incredible though some people occasionally get sick or have allergic reactions ( lips swell up ). It's best to thoroughly cook this mushroom. Some mycologists such specimens that grow on Eucalyptus are most likely to make you sick but so far, for me at least, that is the host tree I usually pick them from and I've yet to get sick . The same dead Eucalyptus stumps each year ( for the past 3 ) and always score big. They can have impressive clusters of rosets that can be 10 lbs or more.
&lt;br/&gt;After the first rain is when they start fruiting. It's definetly an early season variety. Amanita coccora will be the next num num in a month or so....&lt;/div&gt;

    <summary type="html">&lt;div&gt;i've been very intrigued on death caps since my first foray with mushroom education.  I was told thatmost people just die of course but some people have lived and this one person that lived when asked how it tasted (i this it was a woman) said it was the tastiest mushroom she ever had.  i was also told there is no real symptons under a certain amount of the mushroom.  So I was wondering if anyone has tried just a tiny bite of it just to see what it's like.  I would assume most people wouldn't since it's highly dangerous but in very small quantities i hear it reletively has no side effects.  Well anyhow I love this mushrooms mysteriousiness so much i wanted to start a thread on it so anything about death caps please.  also if anyone has done any kind of magic working with them and various other experiences with them.

    <summary type="html">&lt;div&gt;I just heard an interesting story of a friend that I wanted to share.
&lt;br/&gt;Back in Canada my friend Lana's parents have morels that grow in their backyard (they live by a cliff).  What's more interesting is that they are ukrainian and she tells me that their culture has traditional dishes made out of it so her dad knew them right off the bat.  They also collect them and sell them to restaurants for $50 bucks for a bucket.  Ojne year they collected 250!  2 ways of cooking them she told me was:
&lt;br/&gt;1. corn meal porridge with steamed sliced morels boiled in cream and then mixed....she says this is the best....yum!
&lt;br/&gt;2. (deep or pan) fried without batter
&lt;br/&gt;My mouth has been watering all night since she told me.
&lt;br/&gt;i thought i heard that morels grow in disturbed land i.e. burnt forest
&lt;br/&gt;or was i mistaken?&lt;/div&gt;

    <summary type="html">&lt;div&gt;    Monday I went with some friends to Tilden Park for a little foray. It was a little bleak. Our first find were some Laughing Gyms and thoses are just too bitter to grub. As we got further down the trail I spotted a saucer cap and stem poppin out of the ground by an Oak. I ran over to it with glee, a Spring Amanita ! At last we hit the jack pot ! Being one of my favs I had to get on knees and pay homage to this specimen that would later become dinner. We found more up the hill from this first find. These were big Amanitas, I had a perma grin that could to seen for miles ! Spring Amanitas ( Amanita velosa )like open areas around Oaks, and where they can get direct sunlight. As we continued down the path we would find more Amanitas but not in large groups, usually single or in pairs. When young the stems appear almost solid but you can see a kind of pith in the center, mature specimen had hallow stem. If the cap is turned up, it's probably past its time and it will smell really nasty. The Candy caps were around too but we only found a few. Hevella mushrooms such as Black Elfin Saddles were also quite abundant under Oaks. I usually find Hevellas under Pines, so finding them under Oak was an interesting find. More rain this week, lots like more hiking trips will be in order. 
&lt;br/&gt;
&lt;br/&gt;Cooking Amanitas:
&lt;br/&gt;
&lt;br/&gt;When we got home, I started cleaning the mushrooms right away, cutting them lenth wise to check for maggots. We had only one bad Spring Amanita out of all the ones that filled my basket. After cleaning, chop em up in inch long chunks. Take some Bok Choy ( 1 or two heads ) and a bunch of Green Onions and chop those up they way ya like them. In a skillet, add some Olive or Sesame Oil ( about a couple of table spoons ) and a small handful of chopped up Pecans or Walnuts and lightly cook the nuts in the oil til they are slightly brown, then add the Spring Amanitas. Let the Amanitas release their excess water with a few pinches of Sea Salt. When the pan fills up with bubbling juice ( about 2-4 min )add the Green Onions and Bok Choy, still in and cook for about another 5 min or so. Heap that onto some wild rice or eat by itself YUM !

&lt;br/&gt;
&lt;br/&gt;A few months ago I started this tribe and haven't had much to say because i've been living through the winter in vt. There isn't much for winter mushrooms around here except for birch polypores and fomes fomentarious (sp?) to make broth out of. 
&lt;br/&gt;
&lt;br/&gt;Anyway, I can't take it anymore and am returning to my old stomping ground of oakland for half of march and half of April.
&lt;br/&gt;
&lt;br/&gt;It looks like it is a nice wet season there. Does anyone want to give me a guided mushroom tour? for the two years that i lived there it was very dry in the winter and i've never really experienced one of those east bay chanterelle flushes everyone keeps telling me about....
&lt;br/&gt;
&lt;br/&gt;Any takers? I'll buy dinner.

I have fond memories of picking Boletus and Chanterelles with my family back home - we're of Czech descent and mushrooms are an important part of Czech culture and cooking. I assumed that the long periods of rain here in Cali would garner some excellent picking adventures.
&lt;br/&gt;
&lt;br/&gt;Looking forward to any local tips, tricks and hunting spots... oh, and recipes too!

&lt;br/&gt;... like boletus bacon for instance MMMmmMmm.
&lt;br/&gt;
&lt;br/&gt;1 egg scrambled
&lt;br/&gt;1/2 cup flour
&lt;br/&gt;2 tbsp cornmeal
&lt;br/&gt;1 tsp oregano
&lt;br/&gt;salt &amp;amp; pepper
&lt;br/&gt;
&lt;br/&gt;Cut boletus into 1/4 inch thick strips. Dip in eggwash and then in dry mixture. Fry in olive oil until sweated and crisp.
&lt;br/&gt;
&lt;br/&gt;yum!

&lt;br/&gt;Anyway - hats off to the fungus hunters!

    <summary type="html">&lt;div&gt;I was at the Lafayette reservoir Wednesday, there is some fungus growing but virtually all of the 'little brown mushroom' (LBM) variety.  We found two edible boletes - Boletus Citrinoporous, very little else.  I was in the Oakland hills yesterday, didn't see much.

&lt;br/&gt;Seems like we have a really slow start to mushroom season. Friends in Humboldt are reporting chanterelles, amanitas, gomphus - so any day now it ought to start here.

    <title>millenium restaurant - booze + fungus</title>

    <summary type="html">&lt;div&gt;I was at the Mycological Society of SF Fungus fair this weekend, and the chef from Millenium did a cooking demo, which included chanterelle infused tequila!  He mentioned the also serve Maitake infused Sake at the restaurant.
